This is a light, healthy and yummy salmon dish for summer.
What you will need:
- 4(6-ounce) skinless salmon fillets, about 1 inch thick
- 1 tablespoon hazelnut oil
- 1/3 cup finely ground hazelnuts
- 2 tablespoons all purpose flour
- ½ teaspoon kosher salt
Brush rounded side of salmon with 1-tablespoon hazelnut oil. In 9-inch pie plate combine ground hazelnut, flour and ½ teaspoon kosher salt. Dip brushed side of salmon into nut mixture to coat. Place fish, coated side up, in baking pan. Bake uncovered, in 450-degree oven approx. 8-12 minutes or until fish flakes with fork.
Don’t forget the wine and a nice salad!
